After some people vote yes to this recipe, I wrote it. If I made this with only one hand, I'm sure you all will be just fine.

Actually is very simple.

Saffron rice

Put olive oil in a pan with garlic, let it fried a bit and put the rice. Stir and add the saffron. Stir again, add the water, salt and let it simmer. Rice done!

Roasted chicken

Boil water with salt and mint. Add the chicken and simmer for 10 min.
Meanwhile cut the small potatoes in half.
In a mortar put the juice of half lemon, some water where the chicken cooked with spices and a quarter of a coriander, smash everything!

After the chicken is cooked, cut it in 4 display in a food platter appropriate to woven, potatoes on the side of the chicken, the black garlic, shallots, olive oil, butter, chorizo and more mint.
Cover everything with aluminum sheet and goes inside the oven for 20min.
After that period, turn the chicken, cover it again and simmer for more 20mn. You can use the water for cooking the chicken to moister the meat.
Minutes before the chicken is ready, put some honey on top of the meat and potatoes and leave it cook for more 5 min without the aluminum sheet. Done!

How many of you finished lunch or dinner and got this desire for dessert?
I did, so many times.
Well, this recipe takes - literally - 2 minutes to prepare and make. So easy!
Microwaves brownies is gluten free and lactose free.
However you can adjust and use wheat flour and milk if you wish.

The ingredients:
- 1 soap spoon of gluten free flour ( I used from dove)
- 1 soap spoon of chocolate powder
- 1 soap spoon of water (you can use soya milk)
- 1 soap spoon of sugar
- a bit of salt
- 1/2 dessert spoon of oil (just a bit)

Mix everything and put it in microwaves, in maximum, for 30 seconds to one minute. And voilá!
You got yourself a brownie
Remember this is a single brownie, only for one person :D

After some thinking about my newly disease, I remembered how some years ago I got sick drinking coffee made of wheat. I didn't know why I always got sick with that... I never enjoyed bread because I felt a bit sick whenever I ate it.
Never knew and never one single doctor tried to understand that. In fact, my actual doctor wants me to eat everything and she doesn't want me to be celiac.

All this new situation in my life got me in a bad place... Thinking how I miss beer, oh I miss it so much! So much that I actually bought gluten free beer, from Daura Damm!! Can't wait to drink it :)

When I started to cook gluten free, I struggled with bread, specially!
If you try to make them at home, you will see how hard it is...

On my first attempts everything was wrong... to hard, not tasty, too small... And this was may major problem, the bread didn't rise enough... Was seriously frustrating. I spent lots of time reading blogs and tips and nothing seems to work properly. So I decided to make a workshop at Zarzuela and got tips from a professional! Was so refreshing!
Truth to be told, there are so many things about gluten free bread. First, the fact of not having gluten needs extra time at mixing, needs xanthan gum and more humidity.

Because I struggled so much with gluten free bread, I decided: why not share with others some tips?

Quality/Types of flours

There is a large types of flours and brands for different types of breads. There are bags for dark bread, white bread, etc... Each bag was different types of mix flours and this is also important!
This is also a specific flour mix for pastry.
So if you want to make a specific type of bread use the right flour.
In Portugal there are several brands of flours like Germen, Doves Farm, Schär, Nutrifree, etc.
Beside that, Lidl has a gluten free flour very good and also cheap!
Some of this flours are expensive and its better than having to buy single bread.

Yeast

Yeast must be fresh and check if is really gluten free.
Pingo doce has small cubes of yeast next to sweets area. Normally one cube is for one single bread.

Xanthan Gum

If the pre-made mixed flour doesn't have this gum, add it yourself. This gum acts like gluten and joint the elements.

Dough

The dough of gluten free bread need extra time to mix. So if you're making a gluten free dough, normally will need 5 minutes on slow speed than 10 minutes on fast speed.
Advice to use a dough mix-machine.

Humidity

Needs humidity! Another trick I've learned during my workshop.
Try to spread water over the dough before putting it in the oven to rise it.
But be aware, too much water will have a opposite effect.

Rising

Gluten free bread takes extra time to rise. The temperature of the kitchen must be warm and not cold, will help to the dough to rise.
Is also a very good idea to make the dough to grow in the oven at 80/90º just to help the yeast to make effect. Be aware the oven must not be too hot or will start to cook.

Bread Machine

I got one bread machine over christmas and decided to try it on and admit I really like the results.
However, the mixing pas of the machine are really small and is essential to mix the flour/elements very well so I mix everything on my mixing machine than put in the bread machine.
If you are thinking about getting one bread machine for you, check if has gluten free option.
I like it a lot and started to make bread here instead of oven.

Conclusion!

Gluten free bread, as well the bakery, doesn't grow much as normal bread, but they can be sift and tasty.
I already throw some dinners at home and served gluten free bread and people enjoyed very much.
Normally I use Doves Farm and the bread is white and tasty.
With lidl dough the bread is a bit more dark but more soft. Nevertheless prefer the Doves Farm.
If you are thinking about getting a bread machine, I've Becken Espelta and so far so good.
Just need to get the salt right...

What happens to your body when you stop eating wheat/gluten?Some time ago, when for the first time the idea of me being gluten/wheat intolerant pop up, I started to investigate what was gluten, what was celiac disease, its consequences and benefits of a gluten free diet... Back then, one sentence stood in my mind: "gluten free diet its great to lose weight", obviously I immediately though "I don't want to lose any more weight!"
Later, when the first sometimes starts to appear, I saw myself pushed to take this path, a gluten free diet, in order to live well without feeling being eaten by bugs on my skin (everything reacts on my skin).

Than the benefits and consequences started!
This wheat free diet, made me exclude bread, cookies, pasta and everything that contains wheat, which apparently everything has wheat flour... Even when you think, oh know this for sure doesn't have wheat, HAS!
But my body seems to purify without wheat!
So I will tell you my thoughts about this, you from that side may already thought about this diet and need a personal testimony out gluten free diet.

Less swelling

The first benefit I felt was less swelling! Although I'm a skinny girl, I always had an extra fluffy thing on my waist/belly and one or two weeks after I started, the feeling of swelling disappeared. My belly was flat again, I felt less full and the feeling of weight was gone.

More energy

The second benefit, came from the first one, of course. With less swelling feeling, I started to feel more energetic and be sure I already considered myself an energetic person. But that mean I didn't felt tired, swelling and heavy.

Less weight

The negative side of this diet is, at this moment, my weight is way to low for what should be. Normally I'm very difficult to gain weight but now I double my struggle to get a bit fat
For those, whom the main concern is to lose weight/volume, this could be a positive side effect, however for me, is not!

Alternative food choices...

In Portugal, the alternative gluten free food choices are very low and the ones you can get, are so damn expensive. Next time you go to your local supermarket, make this experience, try to get gluten free items from your shopping list, read the labels and try to find free wheat products! You will see the difficulty we have in Portugal. I know in another places, aboard, the gluten free choices are wider! Lucky you :D
And this will take us to...

Do it yourself

Well, because of so little gluten free options, I started to cook (even) more. I cook my own bread, waffles, cakes, pizzas, etc... And you may ask: "Does it pay for?" and I reply: "YES!"
Lets see from this point, gluten free croissants that supermarkets sell cost 3 euros, for 2 little tiny units. With 3 euros, I make 8 waffles, for example, including the electricity I spent.
On the other hand, I have more work cooking and cleaning the kitchen...


Overall
If it was the fact I lost weight and the fact of having so little gluten free options in Portuguese market, this new diet would not be bad at all!
In fact, a gluten free diet may be advice for those who want to loss weight and get healthier.
Search and read what others talk about this diet.
I, for healthy reasons, had to remove wheat from my diet. If it wasn't because of this issue I would never thought of becoming gluten free...

Bem já devem de ter lido a outra receita de waffles (ver aqui), mas hoje trago-vos uma nova receita.

Há bastante tempo que faço as waffles e já me sinto perita no assunto, tanto que comecei a aventurar-me por outro tipo de waffles e a fazer experimentações... A adicionar limão, nozes ou mesmo canela.
Mas hoje trago-vos uma outra, waffles de chocolate! Quem não gosta de chocolate hum?

Bem a receita é simples e muito semelhante à de waffle simples:
- 2 ovos inteiros;
- 1 chávena de chá de farinha sem glúten;
- 2/3 de chávena de chá de leite à temperatura ambiente;
- 1 colher de açucar;
- 1 colher de sobremesa de sal;
- 1 colher de sobremesa de goma Xantana;
- 1 colher de chá (cheia) de fermento;
- 1/8 de chávena de chá óleo;
- 1/2 colher de chá de canela;
- 1/4 de chávena de chá de raspas de chocolate.

Comecem por aquecer a máquina de waffles (o atenção que o Lidl de tempos a tempos tem esta máquina) e enquanto isso preparem a massa...
Numa tigela larga, misturem tudo e envolvam até obterem uma massa homogénea.
Quando a máquina de waffles estiver a luz verde, com a ajuda de uma colher, deitem uma porção da massa e deitem cozer.
Repitam este último passo até acabar a massa.
não é tão simples?

Dica, podem congelar os waffles e comerem durante a semana ao lanche, pequeno-almoço, etc. Basta meterem-nas no microondas ou torradeira uns 30 segundos e parece que foram acabadas de fazer!

Ok, some days ago I saw a 2 ingredients brownies recipe but I thought it had too many eggs for me... So I decided to improvise my own recipe... I made it totally by scratch and had no idea if it was the right combination of ingredients, if it was even an ok recipe... I just did it and hope for the best!
Surprisingly they turn out not ok, BUT out of the world brownies!!! I had to stopped myself from eat it because it was soooo good I just wanted to eat the all thing...

So I will share my recipe with you, lovely people!

Ingredients:
- 3 eggs;
- 1/2 cup of gluten free flour;
- 1 tea spoon of xantham gum;
- 1 tea spoon of yeast;
- 1/2 tea spoon of cinnamon;
- 1/4 cup of milk;
- Chocolate chips (be generous);
- 1 cup (around 200gr) of chocolate Tuli Creme (gluten free);
- A bunch of nuts for decoration.

Put the Tuli Creme in the microwaves for 1 or minutes so it will be more liquid. Mix the flour, the yeast and xantham gum.
Whip the 3 eggs and the Tuli Creme. Pour spoons of flour and mix it. Add the chocolate chips, the cinnamon and mix it again.
Pour the dough in a rectangular cake pan and add more chocolate chips and the nuts.
Let it cook, for about 15 minutes in the oven (around 200º).

One of the thing I mostly miss about not being able to eat wheat/gluten, is pasta and pizzas.
Once again... gluten free ready-made pizza crust in stores are so expensive, it much more cheap to make than by scratch at home. And believe me, is simple!

This recipe will make around 2 thin pizzas crust or one if you prefer not so thin crust. I prefer thin, rather tasty.

Ingredients:

- 2 cups of gluten free flour blend
- 1 cup of warm milk
- 1 soap spoon of oil
- 1 egg
- 2 soap spoon of sugar
- 1 soap spoon of yeast
- 1 soap spoon of xanthan gum
- 1/2 soap spoon of salt
- a portion of corn starch to stretch the dough

Mix all solid ingredients and add the oil, egg and milk. Stir very well, if you have an electronic mixer, use it for 3-4 minutes on high speed.
Pour some corn starch in a clean plan place, or if you want to make like I do, use greaseproof paper and pour some starch and involve some in the rolling pin. Cut the dough in 2 pieces and pour a bit of corn starch on it.
Start to stretch the dough into a circle shape. Add more starch if the dough glue to the rolling pin.
Use the greaseproof paper to move the crust to a pizza pan and bake it for 5 minutes. Afterwards, top the pizza crust with tomato sauce or red pesto (goes amazingly well as pizza topping), and other pizza topping you like. If I may suggest, basil, onion, corn, mozzarella, mushrooms and broccoli?

Today I have another non-skinny recipe! Last week I've talked about gluten free waffles (see recipe here), today I will explain who to make gluten free pancakes Who is your friend hum?


Well, its very easy and will give you around 6-7 pancakes and you only need:

- 300 ml of milk
- 150 gr of gluten free flour (I like Dove Farm mix flour)
- 2 tea spoons of Xanthan gum (once again I used Dove Farm)
- 1 egg
- 3 soap spoon of sugar
- 1 soap spoon of oil



Stir everything, for example I used chef from Tupperware and the dough is ready.
In a non-stick fry put a portion (I used a soap serving soap to guide me) and with the help of a spatula turn to the other side when you see the dough is cooked. Each side takes around 1 min, depends of your stove.



Repete this process until the dough is finished.


Goes tremendously well with chocolate like Nutella!

You can put some in the freezer and therefore you will have some ready for next time you just fell like eating pancakes, because we can not be always cooking.

Since I has forced to started gluten free diet, my all diet changed so much, I had to take off everything with wheat, a bunch of things I used to eat and you never think it was wheat...

Obviously I have to be creative as gluten free pre-made food is so expensive, so its a true challenge to make gluten free food yourself, like waffles. The trick is all about the flour. Find yourself a good mix of gluten free flour. I discovered Dove Farm gluten free flour and I totally advice you to get it! You can not compare to home made mix of flour you read all over the internet... In Portugal, Celeiro sell this flour!



The recipe is very simple and will give around 9 waffles!

Ingredients:
- 1 cup of tea of flour gluten free mix ( with Xantham gum included)
- 1 table spoon of sugar
- 1 table spoon raising powder (gluten free)
- 2 eggs
- 1/4 table spoon of salt
- 1/4 cup of tea of oil
- 2/3 table spoon of milk

Start to mix all ingredients solids. Than mix the eggs, oil and milk ans stir very well until you get a smooth dough.
Pre-heat the waffle machine and spray a bit of oil.


Pour 2 or 3 spoons of the dough into the middle of each waffle form and let it cook until the waffle has a golden colour or the light is off.

I can advice you to eat it with ice-cream (see image below), chantilly and chocolate! Bomb!!

You can make more quantity and put in the freezer involved in tin foil. Every time you want to eat, just take it out, put for one minute in the toaster and you will never notice it had been in the freezer. Perfect!
