After some people vote yes to this recipe, I wrote it. If I made this with only one hand, I'm sure you all will be just fine.

Actually is very simple.

Saffron rice

Put olive oil in a pan with garlic, let it fried a bit and put the rice. Stir and add the saffron. Stir again, add the water, salt and let it simmer. Rice done!

Roasted chicken

Boil water with salt and mint. Add the chicken and simmer for 10 min.
Meanwhile cut the small potatoes in half.
In a mortar put the juice of half lemon, some water where the chicken cooked with spices and a quarter of a coriander, smash everything!

After the chicken is cooked, cut it in 4 display in a food platter appropriate to woven, potatoes on the side of the chicken, the black garlic, shallots, olive oil, butter, chorizo and more mint.
Cover everything with aluminum sheet and goes inside the oven for 20min.
After that period, turn the chicken, cover it again and simmer for more 20mn. You can use the water for cooking the chicken to moister the meat.
Minutes before the chicken is ready, put some honey on top of the meat and potatoes and leave it cook for more 5 min without the aluminum sheet. Done!

How many of you finished lunch or dinner and got this desire for dessert?
I did, so many times.
Well, this recipe takes - literally - 2 minutes to prepare and make. So easy!
Microwaves brownies is gluten free and lactose free.
However you can adjust and use wheat flour and milk if you wish.

The ingredients:
- 1 soap spoon of gluten free flour ( I used from dove)
- 1 soap spoon of chocolate powder
- 1 soap spoon of water (you can use soya milk)
- 1 soap spoon of sugar
- a bit of salt
- 1/2 dessert spoon of oil (just a bit)

Mix everything and put it in microwaves, in maximum, for 30 seconds to one minute. And voilá!
You got yourself a brownie
Remember this is a single brownie, only for one person :D

Bem já devem de ter lido a outra receita de waffles (ver aqui), mas hoje trago-vos uma nova receita.

Há bastante tempo que faço as waffles e já me sinto perita no assunto, tanto que comecei a aventurar-me por outro tipo de waffles e a fazer experimentações... A adicionar limão, nozes ou mesmo canela.
Mas hoje trago-vos uma outra, waffles de chocolate! Quem não gosta de chocolate hum?

Bem a receita é simples e muito semelhante à de waffle simples:
- 2 ovos inteiros;
- 1 chávena de chá de farinha sem glúten;
- 2/3 de chávena de chá de leite à temperatura ambiente;
- 1 colher de açucar;
- 1 colher de sobremesa de sal;
- 1 colher de sobremesa de goma Xantana;
- 1 colher de chá (cheia) de fermento;
- 1/8 de chávena de chá óleo;
- 1/2 colher de chá de canela;
- 1/4 de chávena de chá de raspas de chocolate.

Comecem por aquecer a máquina de waffles (o atenção que o Lidl de tempos a tempos tem esta máquina) e enquanto isso preparem a massa...
Numa tigela larga, misturem tudo e envolvam até obterem uma massa homogénea.
Quando a máquina de waffles estiver a luz verde, com a ajuda de uma colher, deitem uma porção da massa e deitem cozer.
Repitam este último passo até acabar a massa.
não é tão simples?

Dica, podem congelar os waffles e comerem durante a semana ao lanche, pequeno-almoço, etc. Basta meterem-nas no microondas ou torradeira uns 30 segundos e parece que foram acabadas de fazer!

Ok, some days ago I saw a 2 ingredients brownies recipe but I thought it had too many eggs for me... So I decided to improvise my own recipe... I made it totally by scratch and had no idea if it was the right combination of ingredients, if it was even an ok recipe... I just did it and hope for the best!
Surprisingly they turn out not ok, BUT out of the world brownies!!! I had to stopped myself from eat it because it was soooo good I just wanted to eat the all thing...

So I will share my recipe with you, lovely people!

Ingredients:
- 3 eggs;
- 1/2 cup of gluten free flour;
- 1 tea spoon of xantham gum;
- 1 tea spoon of yeast;
- 1/2 tea spoon of cinnamon;
- 1/4 cup of milk;
- Chocolate chips (be generous);
- 1 cup (around 200gr) of chocolate Tuli Creme (gluten free);
- A bunch of nuts for decoration.

Put the Tuli Creme in the microwaves for 1 or minutes so it will be more liquid. Mix the flour, the yeast and xantham gum.
Whip the 3 eggs and the Tuli Creme. Pour spoons of flour and mix it. Add the chocolate chips, the cinnamon and mix it again.
Pour the dough in a rectangular cake pan and add more chocolate chips and the nuts.
Let it cook, for about 15 minutes in the oven (around 200º).

Some days ago, a friend offered me bags (I don't know how many kilograms!) of tomato cherry and long tomato. All biologic!! Amazing...
Normally I only use tomato in sauces so immediately I thought about making tomato sauce for the rest of this year!

Ingredients:

- 2 chopped onions
- several parts of garlic
- olive oil
- basil

Because the tomatoes were small size, I didn't peel them...
In a large pan, put the olive oil, onion, garlic and basil. Later add the tomatoes chopped in half or quarter.
Start to smash them and if, needed, add some water. Stir well when smashing them so it will not stick to the bottom of the pan.
With an electronic wand, finish to mince the tomatoes and let it boil some time.

Later, pour the sauce with the help of a ... to jars. Those jars need to be well clean and sterilized (for that put them in a pan and let the water boil).
I got 8 jars with organic tomato sauce.

Put into the freezer the jars you will not need for now and take them out only when you need.

One of the thing I mostly miss about not being able to eat wheat/gluten, is pasta and pizzas.
Once again... gluten free ready-made pizza crust in stores are so expensive, it much more cheap to make than by scratch at home. And believe me, is simple!

This recipe will make around 2 thin pizzas crust or one if you prefer not so thin crust. I prefer thin, rather tasty.

Ingredients:

- 2 cups of gluten free flour blend
- 1 cup of warm milk
- 1 soap spoon of oil
- 1 egg
- 2 soap spoon of sugar
- 1 soap spoon of yeast
- 1 soap spoon of xanthan gum
- 1/2 soap spoon of salt
- a portion of corn starch to stretch the dough

Mix all solid ingredients and add the oil, egg and milk. Stir very well, if you have an electronic mixer, use it for 3-4 minutes on high speed.
Pour some corn starch in a clean plan place, or if you want to make like I do, use greaseproof paper and pour some starch and involve some in the rolling pin. Cut the dough in 2 pieces and pour a bit of corn starch on it.
Start to stretch the dough into a circle shape. Add more starch if the dough glue to the rolling pin.
Use the greaseproof paper to move the crust to a pizza pan and bake it for 5 minutes. Afterwards, top the pizza crust with tomato sauce or red pesto (goes amazingly well as pizza topping), and other pizza topping you like. If I may suggest, basil, onion, corn, mozzarella, mushrooms and broccoli?

The fact we want to eat healthy, doesn't mean at all, we have to eat basic plain, food without tasty, simply to survive.
Eating well and eating tasty food is halfway to not eat funky food because we still didn't satisfied our appetite and in contrary, will make you eat badly around the clock.
Well, not that I need to loss weight in fact I even need to gain weight but I understand mostly of people can relate to this first situation.

Today's recipe is just a hint who to make a twist of boiled potatoes, in just a couple of minutes, but super tasty and makes a great side dishes for meat, fish, etc...

Ingredients (2 portions):

- 2 a 3 leafs of basil
- 1/4 of purple onion
- 2 big potatoes boiled in big cubes
- olive oil
- spices q.b.
- lime juice



Start to boil the potatoes, with or without the skin.
In a non-stick fry pan, put the olive oil, onion and basil and let it cook until the onion is caramelized. Than add the potatoes.


Stir everything very well, add some spices and a few drops of lime juice. Stir once more and voilá!


So easy right? I ate this potatoes with grilled chicken.

Today I have another non-skinny recipe! Last week I've talked about gluten free waffles (see recipe here), today I will explain who to make gluten free pancakes Who is your friend hum?


Well, its very easy and will give you around 6-7 pancakes and you only need:

- 300 ml of milk
- 150 gr of gluten free flour (I like Dove Farm mix flour)
- 2 tea spoons of Xanthan gum (once again I used Dove Farm)
- 1 egg
- 3 soap spoon of sugar
- 1 soap spoon of oil



Stir everything, for example I used chef from Tupperware and the dough is ready.
In a non-stick fry put a portion (I used a soap serving soap to guide me) and with the help of a spatula turn to the other side when you see the dough is cooked. Each side takes around 1 min, depends of your stove.



Repete this process until the dough is finished.


Goes tremendously well with chocolate like Nutella!

You can put some in the freezer and therefore you will have some ready for next time you just fell like eating pancakes, because we can not be always cooking.

Since I has forced to started gluten free diet, my all diet changed so much, I had to take off everything with wheat, a bunch of things I used to eat and you never think it was wheat...

Obviously I have to be creative as gluten free pre-made food is so expensive, so its a true challenge to make gluten free food yourself, like waffles. The trick is all about the flour. Find yourself a good mix of gluten free flour. I discovered Dove Farm gluten free flour and I totally advice you to get it! You can not compare to home made mix of flour you read all over the internet... In Portugal, Celeiro sell this flour!



The recipe is very simple and will give around 9 waffles!

Ingredients:
- 1 cup of tea of flour gluten free mix ( with Xantham gum included)
- 1 table spoon of sugar
- 1 table spoon raising powder (gluten free)
- 2 eggs
- 1/4 table spoon of salt
- 1/4 cup of tea of oil
- 2/3 table spoon of milk

Start to mix all ingredients solids. Than mix the eggs, oil and milk ans stir very well until you get a smooth dough.
Pre-heat the waffle machine and spray a bit of oil.


Pour 2 or 3 spoons of the dough into the middle of each waffle form and let it cook until the waffle has a golden colour or the light is off.

I can advice you to eat it with ice-cream (see image below), chantilly and chocolate! Bomb!!

You can make more quantity and put in the freezer involved in tin foil. Every time you want to eat, just take it out, put for one minute in the toaster and you will never notice it had been in the freezer. Perfect!

This recipe is one classic from my mother, when I was a child and I clearly remember the thrill I felt every time she made it.
Is very simple, practice and it started when she had leftovers from other dishes. Because we can not waste on our life!

You will need:
- 1/2 of Chouriço (vegetarian on my case);
- 6 Sausages of chicken;
- 250gr of Pasta;
- Tomato sauce;
- 1 small onion, garlic and laurel;
- A cup of white wine or water;
- Olive oil q.b.

Start to cook the pasta and meanwhile cut the onion, garlic and put them in a large pan along with some olive oil and laurel. Cut in slices the sausages and chouriço and mix them in the pan. Let it cook for a couple of minutes.
Than, put the pasta, the tomato sauce and some white wine or a cup of water. After 10 minutes is ready.

Everyday I get more and more vegetarian, and I cook more non-meat recipes.

Strogonoff  of tofu is pretty simple and you can cook it in just 5 minutes!

You will need:
- 1/4 chopped onion;
- 2 pieces of garlic;
- 1/3 of natural tofu,chopped in cubes;
- light cream;
- mushrooms;
- Salt and pepper.

Start by cooking the onion, garlic in sesame oil than add the mushrooms. Let it cook well than you mix the chopped tofu, a bit of salt and pepper.
Natural tofu will cook very fast so just in a couple of minutes, it will be ready.
In the end, put some light cream, cook for another minute and its ready!
Goes very well with rice.

I'm getting use to that and I'm enjoying more and more the idea of stopping eat meat :D

The good thing about this type of dishes is, you can mix everything you like or have at home into the wok mix, put some pasta and you have a good meal in 'no waste' style.
This recipe is very simple and you can cook several meals at once.

You will need:
- 1/2 chopped onion;
- 4 pieces of garlic;
- 1/3 natural tofu, chopped;
- teriyaki sauce;
- Black ear mushrooms;
- Pepper q.b;
- 6 pieces of green tagliatelle,
- 1/4 of vegetarian chouriço;
- 6 cubes of spinaches;
- 100gr of green peas.

Start to cook the onion, garlic in sesame oil than mix the mushrooms, spinach and the peas, in a large wok. Let is cook well than add the pepper.
Meanwhile chopped the chouriço and tofu in cubes.
When the spinaches an mushrooms are ready (more less 5 minutes), put the chopped chouriço and tofu.
Tofu will cook very fast so keep an eye on your wok.
When the bottom of your food start to glue to the wok, add the cook pasta and a large portion of the teriyaki sauce.
Mix everything very well and voilá! Ready :)

If there is something I like is risotto and mushrooms.
Risotto recipe is pretty easy to do, however the first time I thought about making risotto I had the idea that was really complicated, but if simple, you just need some time and patient!
You will need:
- 150gr risotto rice;
- 1 bag of dry divers mushrooms;
- 1/2 chopped onion and some garlic;
- pepper q.b.;
- white wine.

As I used dry mushrooms, you will need to start to leave them in water of at least 30 minutes. In the end of that time, don't throw away that water, you will use it to cook the risotto.
While the mushroom are underwater, put the onion, garlic, pepper and some olive oil in a pan. Let it cook for a couple of minutes. Than add the mushrooms, but don't dry them to much.

The mushrooms need to cook very well. Dry mushrooms need some extra time comparing to other mushrooms.
Add the rice and mix all together, let is cook for a couple of minutes. Than add 2 cups of water (mushrooms water) and let it dry. When the rice is almost dry, add some white wine and once again let it dry.
You will need to repeat this last step - adding water and wine, letting dry - for more 3 times. And its done.
In the plate, add some parmesan cheese and voilá!

Since I stopped eating pork, mostly of my diet had changed.
I have to take care of the type of chouriço or sausages I eat because most of them are made with pork or with some part of pork.

But luckily there is chouriço so good an totally made with soja and other veggie stuff.
So for today the recipe is Pea stew with chicken sausages and vegetarian chouriço.


You will need:
- Half of a onion;
- 3 garlic pieces;
- 2 big chicken sausages;
- half of veg chouriço;
- 250gr of peas;
- olive oil;
- pepper.

Start to cut the garlic and onion and lay it in a pan with the olive oil and pepper. Let it gain some colour than mix the sausages and chouriço all cut in slices.

After 2 minutes mix the peas and cover everything with water. Let it cook for 15 minutes.

Have you ever thought about making your own pizza at home but didn't know how exactly to do it?
Well, I will show you 2 types of pizza and the best of all, they are good for lazy people!
Because you are in the title of being lazy, you don't even have to prepare the pasta, no! Buy pizza base on Pingo Doce. They are fine and cheap!

Start to pre-heat the oven.
Place your pizza base in some pizza tray, and spread tomato sauce*.
Then just fill your pizza with everything you like. In my case I made 2 types of pizza.
Pizza with 4 types of cheese and mushrooms.



Sea Pizza with:
- Clamps
- Mushrooms
- Mince
- Cheese
- Egg


10 minutes later your pizzas will be ready.
Pay attention to your woven, because the pizza will easily burst! :D

* On this case I used sauce of tomato with basil on sale at Pingo Doce.

Today I have returned with a recipe!
Long time no see hum... I don't really have much time to take pictures while I'm cooking, so the recipe posts are always hard to keep up...

So today its not really a recipe, in the sense of cooking the meal but a tip so you may have great meals.
I like to prepare my own hamburgers, I buy the chopped meat and I make them at home with 'Hamburger Press Set' from Tupperware. Specially because I like to give them a twist...
I use spices, garlic and other things like onion, mushrooms or cheese... You have unlimited options if you use your imagination!
For today is Onion and Cheese Hamburger.

Start to mix the spices and very tin garlic in the chopped meat. Mix all very well!
Than open a small hole on it and put a hand full of dry onion and mix all very well again.


Split the meat in equal portions, so each portion will be one hamburger.
Take one single portion and slip it again in half. Make them a bit flat than on top of one put the mix of cheese.


Tip: Continente (supermarket) has this little bag of mix of cheese, perfect to grill or just to use like I did!

Than put the other half on the top of the cheese and everything goes to the tupperware press kit.
And voilá! You have done one hamburguer!!




Repeat all these steps for the rest of the meat and all done.
I can guarantee you, if the meat used is good, your burger will be most tasty and so much better than those ready-made bought in the supermarket. And you will never will go back to those.

Well, I love popcorn. To be honest I love to eat, in general!
On saturday, which are the days that I have to relax, i like to watch movies and eat popcorn.
I always made popcorn in the stove, on a pan with a little spoon of oil. The result was: burned pan, every time!

Well, Pingo Doce was this little recipient to make popcorn on the microwave, for only 3 euros. I hate to spent money on stupid gadgets, however I decided to give it a try and spare my pans.
And I liked the result!
It doesn't need oil, with 2 spoons of corn, just put it in the microwave for 2 minutes and voilá!
I was so happy that I had to share with you, hihi!
